All the alien species encountered during the five first years of exploration, spearheaded by the Star Ship Enterprise, were too numerous to collect data on, (and sometimes it's just too hostile) but they can still be categorized. Unless you're assimilated in the process, which would be very annoying. Since, after all, that's what the Enterprise set off to do, right? Catalog the stars and their inhabitants, or something like that. Not be assimilated. I'm sure someone thought that.
